The coffee comes from the famous Finca Guarumo, home to the famous Black Jaguar and winners of Best of Panama in 2022 and 2023! The coffee is grown by the famous brothers, Ratibor and Allan Hartmann. This is another Hartmann gem!
Guarumo is a relatively new farm purchased by Allan and Elke Hartmann, and Ratibor and Tessie Hartmann in 2016. The brothers first planted Gesha and Chicho Gallo varieties. The first four years were really tough - the poor coffee trees had little protection from the low-pressure systems from the Atlantic and extremely suffered. In 2020, the native shade trees the brothers planted were large enough to protect the coffee trees and suddenly the farm started to produce world-class coffees. Due to the high elevation, low temperatures at night, and heavy mountain rains, the coffee trees at Guarumo have to stay keep up and strong. The coffee trees here are small and compact but super unique.
The high quality coffees produced at Guarumo guarantee by winning the first place of Best of Panama 2022 (Gesha variety) and followed by the first place of Best of Panama 2023 (Chicho Gallo variety), two consecutive years placing as award winner in a roll! An amazing hard work for Guarumo coffee farm!
This particular lot is a 100% Chicho Gallo variety, a name that family gave this Ethiopian Heirloom in honour of Ratibor Chicho Hartmann. The trees look like tall Ethiopian coffee trees, the coffee cherries are small and round. The coffee tends to present with delicate notes and produced with a specific way that the brothers developed for their Best of Panama lots. The process started with a fermentation in cherry for 30 hours, then depulped. After that, undergo the first drying stage by placing the coffee parchment on the raised bed for 5 days and completed in a darkroom. The result is awesome, a tropical version of the variety with super clean! and complex acidity.
RECOMMENDED Suitable for Filter brewing methods and French press.
